SWEET POTATO BROWNIES
Do you love brownies?
I don’t have a sweet tooth personally or crave sugar, but now and then, I like to have a sweet, healthy treat or delicious cake of some kind.
So this is relatively guilt-free!!! I never feel guilty about food anymore, if you have a copy of my book

you will know my relationship with food. (but, of course, it has calories right!!! even though there are only pure whole food ingredients).
For me, I avoid cakes when I go out because they are usually not vegan and gluten-free, one or the other, and a hint of gluten or dairy and it will be certain that my IBS symptoms will be triggered that’s why I love creating anti-inflammatory recipes.
Have you also avoided brownies because you think they might be unhealthy, and high in sugar and fat?
I am here to share a delicious alternative and help you make these delightful brownies at home.
Healthy - gluten-free - vegan sweet potato brownies.
(Yep you read that right sweet potato and free from all the stuff that causes inflammation and yet still delicious)
These brownies are fudgy, moist, rich, gooey, chocolatey and oooh so delicious.

I need to share something with you, you know just ‘because the ingredients are pure, organic and not refined, it still yields calories….just saying!!!!!…

The ingredients are simple, pure and organic
(where possible)
INGREDIENTS FOR THE BROWNIES
450 grams of baked sweet potatoes (weigh 500g of uncooked to ensure you have enough)
2 small ripened bananas (not too ripe)
1 1/2 tbsp melted coconut oil or olive oil if preferred
2/3 cup coconut sugar or 1/2 cup maple syrup, or a slightly smaller amount of date syrup
1 cup ground Gluten-Free oats (or omit for Almond flour)
1/4 cup coconut flour
2 Tbsp ground hemp seeds
2 tbsp ground flaxseed
1 tbsp cinnamon (optional)
8 tbsp Raw cacao powder
2 tsp unsweetened vanilla extract
1/2 cup canned coconut milk
(If you fancy, add 1/2 cup chopped raw pecans too for a little crunch).
METHOD
Preheat the oven to 180°C
Pierce the potatoes with a fork and place them onto a baking tray.
Bake the potatoes for 45 minutes or until softened (I usually do this a day in advance to save time and to allow them to cool)
Once the potatoes are completely cooled, add all of the ingredients to a food processor, , pop the lid on and blend until a thick batter mix is formed
Line a brownie tray with baking paper (approx 8x10”)
Pour the mixture into the tray and wiggle so that it is level
Bake in the oven at 180°c for 45 - 50 minutes (cook on the middle shelf to avoid burning).
Once cooked, take out of the oven, place on a cooling rack and set aside to cool, whilst you prepare the fudge sauce.
Now for the chocolate fudge sauce
INGREDIENTS FOR THE FUDGE SAUCE

4 heaped tbsp raw cacao powder
2 heaped tsp cashew butter (recipe is available in the Vibrant on the Inside ebook)
2/3 cup coconut sugar or 1/2 cup maple syrup, or a slightly smaller amount of date syrup
2 tsp vanilla extract (optional)
1/3 cup canned coconut milk (kept in the fridge overnight)
2 tbsp coconut oil
METHOD
On medium heat place a heavy-based pan
Add the coconut oil and melt, then add the coconut sugar, stirring well until the sugar dissolves.
Add the cocoa powder mixing continuously
Little by little add the coconut milk and whisk until thick like custard, once it is a custard consistency, set aside to cool. (You can place the pan in cool water to speed up this process)
Once cooled pour over your brownie and pop into the fridge for 10-15 minutes to set before cutting.
When the scrummy brownies are ready, pop the kettle on for a lovely tea or a fresh brew of coffee or a matcha latte and enjoy every bite, they really are delicious.
You can freeze too for up to 3 months
